Job summary

The post-holder will report to The Catering Manager and will deputise for the Catering Manager on all catering aspects of the food service to ensure that the delivery of a high quality and cost- effective catering service for patients is provided.

The post holder will be responsible for coordinating, planning and overseeing tasks and operations within the catering team covering activities across East and West Sussex ensuring that services delivered are performance monitored, quality assured and compliant and that the internal operational staff are able to effectively deliver the required care through patient feeding.

The postholder will work with the Facilities Managers, Facilities Supervisors and Clinical Managers to ensure the delivery of a compliant catering service and manage the production processes ensuring that all control procedures are consistently followed together with ensuring stock is controlled and costs minimised.

The post-holder will ensure that all work is undertaken in accordance with Trust Standard Financial Instructions, and in compliance with all relevant Health and Safety requirements.

Deputise in the absence of The Catering Manager

Main duties of the job

o Development of relationships with clinical managers and patients to ensure and promote Trust confidence with food service and the Catering department and to discuss dietary requirements submitted by patients to ensure the correct food is provided.

o Deliver managerial professional control of food service, to ensure patients are offered a choice of nutritious meals and snacks, appropriate for their health needs and religious dietary requirement and general facilities services and contracts to a high standard within designated area of responsibility. Provide management and provision of high standards of food quality from point of purchase to meal preparation, cooking, and service, ensuring quality control process throughout.

o Deliver quality food services to patients and staff monitoring the provision of these services against agreed standards ensuring remedial action is taken to rectify shortcomings in service delivery.

o To conduct and to monitor weekly/monthly hygiene audit score and ensure action is taken to rectify failing scores. Assist in the formulation of plans, objectives, and implementation of associated actions to meet the Directorate's Business Planning process.

o Engage with Ward Managers and other nursing colleagues to ensure services are appropriate to the needs of each ward/patient area. To provide information and advice to staff, service users and visitors (customers) regarding facilities services, e.g. the patient meal service

Manage the catering department within prescribed budgetary limits and maximise of Trust income from provision of meals and snacks and minimise food spoilage and wastage.

Annual review of available resources to incorporate changes made in line with value for money, audit recommendations.

Ensure good stock rotation, monthly stock take/audit and security of stock.

Ensure staff are educated and comply with hygiene, health, and safety legislation to protect themselves, colleagues, service users, staff and visitors including the education of other staff groups such as nursing staff when required.

Identify development potential training needs of all facilities staff that prepare & serve food

Ensure that staff that prepare & serve food have appropriate refresher training on food hygiene as is required.

Check all food temperatures are being maintained to comply with the statutory requirements both within catering establishments and at point of consumption

Regularly check hygiene standards in all Trust catering premises and check where appropriatethe standards of supplier's operations

Consider and review changes in service provision to meet changing service requirements more appropriately and to be responsible for price changes within the cafes.

Implement a programme of customer satisfaction reviews at ward level and monitor the service delivery standards taking any action appropriate to make improvements

Provide effective managerial leadership to ensure proper motivation of staff through effective communications. Develop effective working relationships with ward staff through regular contact and actively promote informal and formal channels of communication with other Trust departments, visitors, and patient groups to ensure services are responsive to service user needs.

Develop evidence based working practices to improve standards of food safety, quality, service, and cost effectiveness trust wide, making best of existing resources.

Make recommendations to the Trust Catering and Hospitality Manager about catering developments and innovative ideas for trust wide catering service improvements, via attendance and contributions at service user and staff meetings.

Assist in Trust wide catering developments, make assessments, providing written reports and implement new ways of working across the Trust.

Undertake the Trusts corporate and local induction and maintain your learning and compliance with training requirements for your role.

Participate in supervision via agreed review and appraisal mechanisms.

It is mandatory for all professionally qualified staff and clinical support staff to actively participate in supervision as an integral part of their professional development.
