Job summary
The post holder will be responsible for delivery of a catering service to clients of the Catering Department.
You will ensure meals are produced to exacting recipes and ensure they are ready for service to agreed deadlines and ensure correct procedures are followed for a cook freeze central production unit operation to other sites.
You will also ensure the services are run smoothly in accordance with Trust guidelines and policies to help maintain a catering service to clients and staff working a series of shifts covering a 5 in 7-day week with occasional weekend working to given standards.
Main duties of the job
Ensure stock control is kept to agreed levels.
Work to correct standards of cleanliness and hygiene adhering to standards in simply safe guidelines ensuring principals of hazard analysis are followed.
To ensure recordings of fridge and freezer, Hot food and Blast chilling temperatures are taken and put onto SSTK forms on a daily basis and kept on file for 3 months.
Assist the Head chef to carry out quality control checks by testing of dishes and ingredients as needed, and the portion sizes given on a daily basis, Taste and visually conduct quality control checks on all food to ensure standard of taste and presentation is maintained before service and occasionally visit wards to ensure food being served is still at its optimum quality.
Record wastage of both left over and plate waste of food being served, record and instigate amends as needed to reduce wastage of food and costs.
Must maintain high standards of personal care at all times in line with trust policies.
